Founded by Doctor Carlos Bautista, Montevalle Resort opened its doors in 2022. With a goal to Immerse yourself in an adventure crafted to heighten your senses and elevate your relaxation and comfort to new heights. Doctor Bautista is champion of the idea that nothing beats a moment of total detachment, solely focused on nurturing your body and mind, promoting optimal health and well-being. At Montevalle Resort with its tranquil setting, luxury spa and dining options allows its guests to truly escape. We spent the weekend exploring Montevalle Resort and fell in love with its unique perspective on relaxing. Here is what we discovered!


The Property

This sprawling resort is designed to truly escape the hustle and bustle of your life! From relaxation gardens, spa, pool, and dining options, Life at Montevalle Resort moves a little slower and we were so okay with that! From taking in the views on the casita patio to a dip in the hot tub with a glass of wine from the neighboring vineyard to walks through the lavender fields and luxurious dinners atop the hilltop restaurant it was easy to truly escape.

The Rooms

The Rooms or Villas at Montevalle are actually luxury casitas spread around the property. With private patios, extra large walk in showers, ample space, and comfy king size beds the rooms were no disappointment. Large vaulted ceilings along with a sun window in a small upstairs relaxation room provides ample natural light. Cozy up in their high thread sheets and relax while the sun sets over the surrounding wine soaked mountains.

Prices for the Montevalle Resort are incredibly well valued. With prices for a one night stay ranging from $250-$300 a night, these prices are perfect for a stay where you can save a little for extra wine at the wineries!

The Dining

Liebre Restaurant is the mountain top restaurant at Montevalle, with gorgeous views of the mountains, vineyards, lavender and olive fields, this restaurant almost feels too good to be true. With set prices for resort guests you can enjoy the following:

The menu from Liebre is created by Chef Miguel Torres, he loves to create health focused tasty meals that will make you refreshed. From locally sourced veggies (many of them sourced a stone throws away at the resorts garden), fresh cheese from El Porvenir, the local town adjacent, to locally sourced meats like fresh steak and chicken the menu was packed with favorites.

We sampled a few dishes and were blown away with their incredible flavors paired with well made local wine from our favorite vineyard Vinos Paoloni.


The Spa

The Spa at Montevalle Resort is where you can truly relax. From luxurious 50 min massages, dip in the luxury pool or hot tub, Intravenous IV therapies, facials, hyperbaric treatments, and even a “Wine Therapy” where the power of the grape can actually heal you, the Spa here is seriously impressive.

We had two treatments each a 50 min massage, Ashley loves the relaxing touch more so she opted for the “Swedish” whereas I prefer a deeper massage, like their “deep tissue” where I can really get some knots worked out! I loved the small touches that the Spa had thought through, from essential oil aroma therapy before the massage to private lockers and changing rooms so you can leave all of your belongings behind.

Once you enjoy a massage we highly recommend a dip in the pool or hot tub it's truly the best way to relax at Montevalle!

These treatments are best enjoyed if you're a guest but don’t worry If you’re not! The spa is available for visitors looking for a day pass!
